Almost every food court in Singapore will have one of these stalls: Niang Dou Fu (we call them yong tau foo), where you pick and put the ingredients you want on your own into a bowl and pass it to the staff to have the chef cook them in the style of your liking, be it boiled on its own, with laksa soup, curry soup or clear soup. And this place is just that. For any Singaporeans who's been out of the country long enough, this could be a haven of nostalgia for cheap every-day food that's not chicken rice.
