Chaozhou cuisine is famed for its delicately-flavoured, minimal-oil seafood and veggie dishes, yet the house speciality at Li Xuan, which you’ll see on nearly every table, is a deliciously rich and greasy departure from the norm. Hong Kong chef Lee Zandong’s version features half a duck, braised for two hours, smothered in a blanket of taro paste and deep fried to produce a crunchy filigree crust. 

The whole dish is then sprinkled with crispy pan- fried seaweed and comes with a side of caramel-like dipping sauce whose intense sweetness makes a brilliant foil for the intensely savoury, meltingly soft meat. Almost as good are the pliant rice-flour rolls with a piquant XO sauce (38RMB) and the xia jiao (36RMB/four), whose delicate wrappers can barely contain their generous load of sweet, briny shrimp.
