There are some impressive sandwiches coming out of the kitchen at serial restaurateur Craig Willis’ latest venture Agnes, set on the first floor of Wukang Market (below two of Willis’ other new restaurants, Something and Mi Mian Hui Xin). Chef Alexander Bitterling presides over the menu, kept small (so far) with a focus on smoked meats and diner-styled drinks like slushies and milkshakes. The two sandwiches here come with soft potato brioche buns, though it’s the meats that deserve applause – crispy pork belly or 16-hour slow-cooked and smoked beef brisket, both complemented with Scandinavian-inspired toppings.
